🥕 Easy Carrot Cake Recipe
Ingredients:

2 cups grated carrots (about 3 medium carrots)

1½ cups all-purpose flour

1 cup granulated sugar

½ cup vegetable oil

2 large eggs

1½ tsp baking powder

½ tsp baking soda

1 tsp ground cinnamon

¼ tsp salt

1 tsp vanilla extract

Optional: ½ cup chopped nuts or raisins
For Quick Cream Cheese Frosting:

4 oz cream cheese, softened

2 tbsp butter, softened

1 cup powdered sugar

½ tsp vanilla extract
Instructions:

Preheat oven to 350°F (175°C). Grease an 8×8 inch square pan or a loaf pan.

Mix wet ingredients: In a large bowl, whisk together oil, eggs, sugar, and vanilla.

Add dry ingredients: Stir in flour, baking powder, baking soda, salt, and cinnamon until just combined.

Fold in carrots (and nuts or raisins if using).

Bake: Pour batter into the pan and bake for 30–35 minutes, or until a toothpick comes out clean.

Cool completely before frosting.

Make frosting: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla; mix until fluffy. Spread on the cooled cake.
